A delightful low-carb meal combining tender beef with colorful vegetables, served over cauliflower rice, perfect for busy weeknights.

Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 red bell peppers, sliced
  • 1 yellow onion, sliced
  • 8 oz mushrooms, quartered
  • 2 cups cauliflower rice
  • 1 cup shredded provolone cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  3. Cook the beef in batches until browned, about 3-4 minutes each batch.
  4. Remove the beef from the skillet and set aside.
  5. Sauté the peppers, onions, and mushrooms in the remaining oil for 5-7 minutes until softened.
  6. Add garlic powder, oregano, salt, and pepper to the skillet, stirring to combine the flavors.
  7. Return the cooked beef to the skillet and stir until everything is heated through.
  8. Combine the cauliflower rice in a separate oven-safe dish and bake in the oven for 10 minutes.
  9. Divide the cauliflower rice into bowls, then top with the beef and vegetable mixture.
  10. Sprinkle shredded provolone cheese on top and allow it to melt slightly.
  11. Let the bowls sit for 1 minute before serving.

Notes

Ensure the beef is sliced thinly for quick cooking and optimal tenderness. Adjust the seasonings to your taste; adding a splash of hot sauce can give it an extra kick.
