1 medium cauliflower, cut into bite-sized florets
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon chili powder
Salt and pepper, to taste
8–10 corn or flour tortillas
1/2 cup sour cream or Greek yogurt
1/4 cup fresh cilantro, finely chopped
Juice of 1 lime
1 tablespoon olive oil (for the crema)
Instructions
Preheat your oven to 400°F (200°C).
Toss the cauliflower florets with 2 tablespoons of olive oil, cumin, paprika, chili powder, salt, and pepper until evenly coated.
Spread the cauliflower on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and golden brown.
While the cauliflower roasts, whisk together the sour cream or Greek yogurt, chopped cilantro, lime juice, and 1 tablespoon of olive oil in a small bowl until smooth.
Warm the tortillas in a dry skillet or microwave for a few seconds.
Assemble the tacos by placing a portion of roasted cauliflower into each tortilla and drizzling with the prepared cilantro lime crema.
Notes
Serve warm with extra cilantro and sides like salsa or guacamole. Leftovers can be stored separately in an airtight container for up to 3 days.
