A simple and healthy meal that combines ground turkey with earthy Brussels sprouts, perfect for busy weeknights.

  • 1 lb ground turkey
  • 2 cups Brussels sprouts, halved
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup chicken broth
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon.
  3. Add the diced onion and sauté until softened.
  4. Stir in the halved Brussels sprouts and cook for about 5-7 minutes until they start to char slightly.
  5. Add the minced garlic, salt, pepper, and red pepper flakes, stirring for one minute.
  6. Pour in the chicken broth, cover the skillet, and simmer for 3-5 minutes until the sprouts are fork-tender.
  7. Remove from heat, stir in the fresh lemon juice, and serve immediately.

Notes

Serve hot, pairs well with brown rice, quinoa, or a green salad. Use fresh herbs for added flavor.
