  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1 large egg
  • 1 cup cottage cheese
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter or oil
  • 1/2 cup fresh or frozen blueberries
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  2. In a separate medium bowl, combine the cottage cheese, egg, vanilla extract, and melted butter.
  3. Fold the wet ingredients into the dry ingredients until just combined; do not overmix.
  4. Gently fold in the fresh blueberries.
  5. Lightly grease your air fryer basket with non-stick spray.
  6. Scoop rounded tablespoons of dough and drop them into the air fryer basket, leaving some space between them.
  7. Cook at 350°F (175°C) for 8 to 10 minutes, or until the donut holes are golden brown and cooked through.
  8. Remove from the air fryer and dust with powdered sugar while still warm.

Notes

For a lighter texture, sift the flour before measuring. If using frozen blueberries, do not thaw them before adding.
