A fun and flavorful twist on classic walking tacos, this casserole features layers of seasoned beef, beans, and cheese over crunchy tortilla chips.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 cup sour cream
  • 1 packet taco seasoning
  • Optional garnishes: diced tomatoes, lettuce, jalapenos, green onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat and stir in taco seasoning and black beans.
  3. Layer half of the tortilla chips in a baking dish, followed by the beef mixture, and top with cheese.
  4. Add the remaining tortilla chips and cover with more cheese.
  5. Bake in the preheated oven for 15-20 minutes, until the cheese is melted and bubbly.
  6. Serve with sour cream and optional garnishes.

Notes

For a spicier version, add jalapenos or use spicy taco seasoning. For a vegetarian option, replace ground beef with plant-based meat.
