Juicy and flavorful chicken kabobs marinated with lemon and herbs, perfect for grilling.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1 lemon, juiced
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste
  • Skewers (wooden or metal)
  • Optional: vegetables for grilling (bell peppers, onions, zucchini)

Instructions

  1. Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper in a bowl.
  2. Cut chicken breasts into bite-sized pieces and add to the marinade. Mix well to coat.
  3. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  4. Preheat the grill to medium-high heat.
  5. Soak wooden skewers in water for 30 minutes if using.
  6. Thread the marinated chicken onto skewers, alternating with vegetables if desired.
  7. Grill for 10-15 minutes, turning occasionally, until cooked through.

Notes

Serve with rice, salad, or tzatziki sauce. Store leftovers in an airtight container for up to 3 days.
