Ingredients

  • 1 lb lean ground beef
  • 3/4 cup soft breadcrumbs
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, finely minced
  • 1 tbs soy sauce
  • 1/2 tsp grated fresh ginger
  • 2 eggs
  • 2 tbs milk
  • 1/4 tsp black pepper
  • 8 oz can pineapple chunks with juice
  • 1 cup dark brown sugar
  • 1/2 cup rice vinegar
  • 3 tbs soy sauce
  • 1 medium green pepper, cut in chunks
  • 2 tbs cornstarch
  • 2 tbs water

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine ground beef, breadcrumbs, onion, garlic, 1 tbs soy sauce, ginger, eggs, milk, and pepper in a large bowl until well mixed.
  3. Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Bake for 15-20 minutes or until browned and cooked through.
  5. Combine pineapple juice (from the can), brown sugar, rice vinegar, and 3 tbs soy sauce over medium heat in a large skillet.
  6. Whisk together cornstarch and water in a small bowl to create a slurry, then add it to the skillet.
  7. Simmer the sauce until thickened, then add the pineapple chunks and green pepper chunks.
  8. Add the cooked meatballs to the sauce and simmer for an additional 5 minutes until well coated and vegetables are tender-crisp.

Notes

Serve warm over rice, garnished with sesame seeds or chopped green onions. Store leftovers in an airtight container in the refrigerator for up to 3 days.
