Ingredients

Scale
  • 1.6 pounds ground beef
  • 4 tablespoons breadcrumbs
  • 1 teaspoon salt
  • 1 teaspoon coarsely ground black pepper
  • 1 teaspoon dried onion
  • 1 egg
  • 1 teaspoon Dijon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon salt (for sauce)
  • 1 teaspoon coarsely ground black pepper (for sauce)
  • 1 teaspoon dried thyme
  • 1/4 cup beef or chicken broth
  • 1 1/4 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon horseradish
  • Chopped chives for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Combine ground beef, breadcrumbs, 1 teaspoon salt, 1 teaspoon pepper, dried onion, egg, and Dijon mustard in a bowl; mix until just combined.
  3. Divide the mixture into 4 patties (about 4 oz each).
  4. Heat olive oil and butter in a skillet over medium-high heat; cook patties for 3-4 minutes per side until browned.
  5. Transfer patties to the oven and bake for 5-7 minutes for medium doneness.
  6. Sauté onion and garlic in the same skillet until softened (2-3 minutes).
  7. Stir in 1 teaspoon salt, 1 teaspoon pepper, thyme, broth, heavy cream, Parmesan, and horseradish; simmer until slightly thickened.
  8. Return patties to the skillet and baste with sauce for 3-4 minutes.
  9. Serve steaks topped with sauce and garnish with chives.

Notes

Ensure not to overmix the beef mixture to keep patties tender. Fresh horseradish can enhance the sauce’s flavor.
