Ingredients

Scale
  • 1 lb 93% lean ground turkey
  • 1 tbsp olive oil
  • 2 large sweet potatoes, peeled and cut into 1/2-inch cubes
  • 2 medium bell peppers, diced
  • 1 medium onion, diced
  • 2 cups fresh baby spinach, packed
  • 1 1/2 cups mozzarella cheese, shredded
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey along with your spices. Cook for 5–7 minutes, using a wooden spoon to break the meat apart until thoroughly browned.
  3. Add the diced onions and bell peppers to the same skillet. Sauté for 3–4 minutes just until the edges begin to soften. Transfer this mixture to a bowl with the cooked turkey.
  4. Combine the cubed sweet potatoes and fresh spinach in the bowl containing the turkey and peppers. Toss until the spinach is evenly distributed and the potatoes are well-coated.
  5. Transfer the mixture into your prepared baking dish, spreading it into an even layer. Pour the chicken broth over the top.
  6. Cover the dish tightly with aluminum foil and bake for 20 minutes.
  7. Remove the dish from the oven, discard the foil, and sprinkle mozzarella cheese evenly across the surface. Return to the oven uncovered for an additional 10–15 minutes until the cheese is bubbling and golden brown.

Notes

This dish is best served hot from the oven and can be garnished with fresh herbs like parsley or a dollop of sour cream.
