Hearty Loaded Fiesta Potato Bowls filled with crispy potatoes, seasoned beef, and fresh toppings for a customizable meal.

Ingredients

  • 4 medium Potatoes
  • 1 lb Ground beef
  • 2 tbsp Olive oil
  • 1 packet Taco seasoning
  • 1 can Black beans, drained
  • 1 cup Corn
  • 1 cup Cheese, shredded
  • 1/2 cup Sour cream
  • 1/4 cup Fresh cilantro, chopped
  • 1 Avocado, sliced
  • 1 cup Salsa

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the potatoes into cubes and toss with olive oil and salt. Spread on a baking sheet and roast for 25-30 minutes until crispy.
  3. In a skillet, cook the ground beef over medium heat until browned. Add taco seasoning and stir well.
  4. Once the potatoes are roasted, assemble the bowls by adding a base of potatoes, then topping with ground beef, black beans, corn, cheese, sour cream, fresh cilantro, avocado, and salsa.
  5. Customize each bowl with your preferred toppings. Serve warm and enjoy!

Notes

For extra crispy potatoes, ensure they are in a single layer on the baking sheet. Store leftovers in an airtight container in the refrigerator for up to three days.
