A delicious and hearty one-skillet meal featuring savory smoked turkey sausage and fresh vegetables, perfect for busy weeknights.

  • ½ tablespoon oil
  • 1 pound smoked turkey sausage (cut into ½ inch rounds)
  • ½ cup chopped yellow onion
  • 1 medium red bell pepper, diced
  • 1 cup corn kernels (frozen, canned, or fresh)
  • 2 tablespoons tomato paste
  • ½ teaspoon garlic powder
  • ½ teaspoon ground paprika
  • 2 cups instant rice
  • 2 cups low sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the smoked turkey sausage rounds and sear until browned on both sides.
  3. Stir in the chopped onion and red bell pepper, cooking until softened.
  4. Add the corn, tomato paste, garlic powder, and paprika, stirring well to coat the vegetables and meat.
  5. Pour in the chicken broth and bring the mixture to a simmer.
  6. Stir in the instant rice, cover the skillet, and reduce heat to low.
  7. Cook for 5-7 minutes or until the liquid is absorbed and the rice is tender.
  8. Season with salt and pepper to taste before serving.

Notes

For added flavor, try using smoked paprika instead of regular paprika. Feel free to add in other vegetables like zucchini or spinach for more nutrients. If you like a bit of heat, toss in some red pepper flakes or a dash of hot sauce when cooking.
