  • 4 bell peppers
  • 1 pound lean ground beef
  • 1 cup cooked brown rice
  • 1 cup diced tomatoes
  • 1 cup chopped onion
  • 1 cup chopped zucchini
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the ground beef over medium heat until browned.
  4. Add the onions, zucchini, and diced tomatoes to the skillet and cook until softened.
  5. Stir in the brown rice, garlic powder, cumin, salt, and pepper.
  6. Stuff the mixture into the bell peppers.
  7. Place the stuffed peppers upright in a baking dish and cover with foil.
  8. Bake for 30-35 minutes, until the peppers are tender.
  9. If desired, sprinkle cheese on top and bake for an additional 5 minutes.
  10. Serve hot and enjoy!
