A delicious twist on the classic Philly cheesesteak, packed with veggies and protein, served in a bowl without the bread.

Ingredients

  • 1 lb ground beef or turkey
  • 1 cup mushrooms, sliced
  • 1 cup bell peppers, sliced
  • 1 cup provolone cheese, shredded
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: cooked rice or quinoa for serving

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add sliced mushrooms and bell peppers, sautéing until softened, about 5-7 minutes.
  3. Push the vegetables to the side and add the ground beef or turkey to the skillet, breaking it apart as it cooks.
  4. Season with salt and pepper. Cook until the meat is no longer pink.
  5. Stir the vegetables into the meat mixture.
  6. Top with provolone cheese and cover the skillet to melt the cheese, about 2-3 minutes.
  7. Serve over cooked rice or quinoa, if desired.

Notes

Add a sprinkle of fresh herbs or a squeeze of lemon juice for extra flavor. Leftovers can be stored in the refrigerator for up to three days.
