2 soft-boiled eggs
1 ripe avocado
1 cup cherry tomatoes, halved
1/4 red onion, diced
Fresh herbs (such as cilantro or parsley), chopped

Instructions
Start by soft-boiling the eggs: place eggs in a pot, cover with water, and bring to a boil. Once boiling, reduce heat and simmer for 6-7 minutes. Remove eggs and cool in cold water. Peel and chop eggs.
In a bowl, mash the avocado.
Add the chopped eggs, halved cherry tomatoes, diced red onion, and chopped herbs to the bowl.
Season with salt, pepper, and lemon juice if desired.
Stir gently to combine all ingredients, being careful not to mash the tomatoes.
Serve immediately or refrigerate for later.
