Nutritious and customizable chicken taco bowls perfect for meal prep, packed with protein, fiber, and vitamins.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup quinoa or brown rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup salsa
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Cook the quinoa or brown rice according to package instructions.
  2. While the grains cook, season the chicken breasts with chili powder, cumin, salt, and pepper.
  3. In a skillet over medium heat, add a bit of oil and cook the chicken for 6-7 minutes on each side, or until cooked through. Allow to rest, then slice.
  4. In serving bowls, layer the cooked grains, black beans, corn, diced bell pepper, sliced chicken, avocado, and cherry tomatoes.
  5. Top with salsa and garnish with fresh cilantro if desired.
  6. Serve immediately or store in meal prep containers for later.

Notes

These bowls can last for about 3-4 days in the refrigerator. Reheat in the microwave for a quick meal.
