Hawaiian Meatballs are a delightful fusion of sweet and savory flavors, featuring juicy meatballs in a tangy pineapple sauce, perfect for family dinners and gatherings.

Ingredients

  • 1 lb lean ground beef
  • 3/4 cup soft breadcrumbs
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, finely minced
  • 1 tbs soy sauce
  • 1/2 tsp grated fresh ginger
  • 2 eggs
  • 2 tbs milk
  • 1/4 tsp black pepper
  • 8 oz can pineapple chunks with juice
  • 1 cup dark brown sugar
  • 1/2 cup rice vinegar
  • 3 tbs soy sauce
  • 1 medium green pepper, cut in chunks
  • 2 tbs cornstarch
  • 2 tbs water

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine ground beef, breadcrumbs, onion, garlic, 1 tbs soy sauce, ginger, eggs, milk, and pepper in a large bowl until well mixed.
  3. Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  4. Bake for 15-20 minutes or until browned and cooked through.
  5. Combine pineapple juice, brown sugar, rice vinegar, and 3 tbs soy sauce in a large skillet over medium heat.
  6. Whisk together cornstarch and water in a small bowl to create a slurry, then add to the skillet.
  7. Simmer the sauce until thickened, then add pineapple chunks and green pepper.
  8. Add the cooked meatballs to the sauce and simmer for an additional 5 minutes until well coated.
  9. Serve warm over rice if desired.

Notes

For a spicier version, add red pepper flakes. Store leftovers in an airtight container for up to 3-4 days.
