Delicious and healthy Greek Turkey Meatball Bowls combining meatballs, quinoa, and fresh vegetables, topped with zesty tzatziki sauce.

Ingredients

  • 1 pound ground turkey
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cup quinoa
  • 2 cups water or broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 1/2 cup tzatziki sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix ground turkey, breadcrumbs, Parmesan, garlic, oregano, salt, and pepper in a bowl.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake the meatballs for 20-25 minutes or until they are cooked through.
  5. Rinse the quinoa and place it in a saucepan with water or broth.
  6. Bring it to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until fluffy.
  7. Layer the quinoa, meatballs, cherry tomatoes, cucumber, red onion, feta, and olives in a serving bowl.
  8. Drizzle with tzatziki sauce before serving. Enjoy your nutritious meal!
