Easy Turkey Stuffed Sweet Potatoes

Delicious and nutritious stuffed sweet potatoes filled with lean ground turkey and fresh vegetables.

Ingredients

  • 4 medium sweet potatoes
  • 1 lb lean ground turkey
  • 1 tablespoon plus 1 teaspoon olive oil
  • 2 cloves garlic, minced
  • 1 1/3 teaspoons ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 cup canned diced tomatoes with juices
  • 1 medium zucchini, grated
  • 1 large handful of spinach, chopped
  • 1 cup black beans, rinsed and drained (optional)
  • 1 cup corn kernels (optional)
  • 1 cup cheddar cheese, shredded
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and bake the sweet potatoes for 45-60 minutes until tender.
  2. While the potatoes bake, heat 1 tablespoon of olive oil in a skillet over medium heat.
  3. Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon.
  4. Stir in the garlic, cumin, paprika, oregano, and chili powder. Cook for 1 minute until fragrant.
  5. Add the diced tomatoes with juices, grated zucchini, spinach, black beans, and corn.
  6. Simmer for 5-7 minutes until vegetables are tender and the liquid has reduced.
  7. Once the potatoes are done, slice them open lengthwise and gently fluff the inside with a fork.
  8. Mix 1 teaspoon of olive oil and 1/3 teaspoon of cumin into the potato flesh.
  9. Stuff each potato with the turkey mixture and top with shredded cheddar cheese.
  10. Broil for 2-3 minutes or until the cheese is melted and bubbly.
