A quick and flavorful weeknight dinner featuring crispy roasted potatoes with seasoned beef and a mix of delicious toppings.

Ingredients

  • 4 medium Potatoes, cubed
  • 1 lb Ground beef
  • 1 cup Cheddar cheese, shredded
  • 1 Avocado, diced
  • 1 cup Sweet corn
  • 1 cup Pico de gallo
  • Sour cream or crema for drizzle
  • Seasonings: salt, pepper, taco seasoning

Instructions

  1. Preheat the oven to 400°F (200°C) and wash and cube the potatoes.
  2. Toss them with olive oil, salt, and pepper.
  3. Spread on a baking sheet and roast for about 25-30 minutes until crispy.
  4. In a skillet, cook the ground beef over medium heat until browned.
  5. Season with taco seasoning, according to package instructions.
  6. Once the potatoes are done, layer them in bowls with the cooked beef, shredded cheddar cheese, diced avocado, sweet corn, and pico de gallo.
  7. Drizzle with sour cream or crema to serve. Enjoy!

Notes

Ensure the potatoes are cut into even cubes for uniform cooking. If you want extra crispy potatoes, don’t overcrowd the baking sheet.
