A comforting casserole with layers of flavorful beef, vegetables, and cheese tucked beneath warm biscuit pieces, perfect for family dinners.

Ingredients

  • 1 lb ground beef
  • 1 can refrigerated biscuits
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 can diced tomatoes
  • 2 cups shredded cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat.
  3. Add the diced bell pepper and onion to the skillet and cook until softened.
  4. Stir in the diced tomatoes and season with salt and pepper.
  5. Layer half of the biscuit pieces in a greased baking dish.
  6. Spread the beef mixture over the biscuits and top with shredded cheese.
  7. Add the remaining biscuit pieces on top of the cheese.
  8. Bake in the preheated oven for 25-30 minutes until the biscuits are golden brown and the cheese is melted.
  9. Let it cool for a few minutes before serving.

Notes

Be sure to drain the ground beef properly to avoid a greasy casserole. You can add chili powder or garlic for extra flavor. For crispy biscuits, bake a little longer but watch the cheese.
