A classic comfort food that warms the soul, this easy homemade beef stew is perfect for chilly evenings with tender chunks of meat and fresh vegetables.

Ingredients

  • 2 pounds Beef Chuck Roast, cut into 2-inch chunks
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Coarsely Ground Black Pepper
  • 2 tablespoons Gluten-free All-Purpose Flour
  • 2 tablespoons Olive Oil
  • ½ Yellow Onion, chopped
  • 4 Garlic Cloves, minced
  • 1 Large Carrot, cut into 2-inch chunks
  • 2 Yukon Gold Potatoes, diced into 2-inch pieces
  • 2 Cups Beef Broth
  • ¼ Cup Tomato Paste
  • 1 tablespoon Worcestershire Sauce
  • 1 Bay Leaf
  • 2 teaspoons Fresh Thyme Leaves

Instructions

  1. Preheat your oven to 325° F. Season the beef chunks thoroughly on all sides with kosher salt and black pepper. Sprinkle the flour over the meat and toss to coat.
  2. Heat the olive oil in an 8-quart Dutch oven over medium heat. Brown the beef in batches for 3-4 minutes per side. Remove and set aside.
  3. Add the chopped onion, garlic, and carrot to the Dutch oven. Cook for 2-3 minutes until softened and slightly browned.
  4. Add the diced potatoes, beef broth, tomato paste, bay leaf, thyme, and Worcestershire sauce. Scrap the bottom of the pot to release brown bits.
  5. Return the browned beef to the pot, cover, and transfer it to the oven. Cook for 2 to 2.5 hours until the beef is fork-tender.

Notes

Serve hot with crusty bread and fresh thyme for added flavor.
