A healthy and delicious family dinner featuring lean ground turkey, sweet potatoes, and a mix of colorful vegetables, all baked to perfection in one dish.

  • 1 lb 93% lean ground turkey
  • 1 tbsp olive oil
  • 2 large sweet potatoes, peeled and cut into 1/2-inch cubes
  • 2 medium bell peppers, diced
  • 1 medium onion, diced
  • 2 cups fresh baby spinach, packed
  • 1 1/2 cups mozzarella cheese, shredded
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey along with your spices. Cook for 5–7 minutes, using a wooden spoon to break the meat apart until it’s thoroughly browned.
  2. Add the diced onion and bell peppers to the skillet. Cook for an additional 3–4 minutes until the veggies are soft.
  3. Combine the cooked turkey mixture with the sweet potatoes, spinach, and chicken broth in a large bowl. Stir everything together until well mixed.
  4. Transfer the mixture to your greased baking dish. Spread it out evenly and cover the dish with aluminum foil to lock in moisture while baking.
  5. Bake for 25 minutes in the preheated oven.
  6. Remove the foil and sprinkle the shredded mozzarella cheese over the top. Return it to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.

Notes

If you have leftovers, store them in an airtight container in the refrigerator. This dish lasts about 3-4 days and can be frozen for longer storage.
