A healthy and delicious dish combining lean ground turkey, sweet potatoes, and colorful vegetables, perfect for busy weeknights.

  • 1 lb 93% lean ground turkey
  • 1 tbsp olive oil
  • 2 large sweet potatoes, peeled and cut into 1/2-inch cubes
  • 2 medium bell peppers, diced
  • 1 medium onion, diced
  • 2 cups fresh baby spinach, packed
  • 1 1/2 cups mozzarella cheese, shredded
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey with your spices. Cook for 5–7 minutes, using a wooden spoon to break the meat apart until it is fully browned.
  3. Add the sweet potatoes, bell peppers, and onion. Stir the vegetables with the turkey for another 5 minutes until they begin to soften.
  4. Add the fresh spinach to the mix and stir until the spinach wilts. Then, pour the chicken broth into the skillet, mixing it all together.
  5. Transfer the mixture into the greased baking dish and spread it evenly. Top this with shredded mozzarella cheese.
  6. Cover the baking dish with aluminum foil. Bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  7. Once out of the oven, let it cool for a few minutes before serving.

Notes

For added flavor, consider adding diced jalapeños or a splash of hot sauce. Substitute ground turkey with ground chicken or black beans/lentils for a vegetarian version.
