  • 1/2 cup Unsalted butter, room temperature
  • 4 Garlic cloves, minced
  • 1/4 cup Fresh parsley, chopped
  • 2 tbsp Lemon juice
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 4 Boneless, skinless chicken breasts
  • 1/2 cup All-purpose flour
  • 2 Large eggs, beaten
  • 1 cup Plain breadcrumbs
  • 1/4 cup Avocado oil or neutral oil

Instructions

  1. Pound chicken breasts evenly to 1/2-inch thickness.
  2. Season butter with salt, garlic, parsley, and lemon juice.
  3. Spread butter mixture evenly down the center of each chicken breast.
  4. Fold chicken over filling and secure with toothpicks.
  5. Coat chicken in flour, dip in beaten eggs, then press into breadcrumbs.
  6. Heat oil in an oven-safe skillet; place chicken in the hot skillet and transfer to the oven.
  7. Bake at 400°F (200°C) for 30 minutes until golden and cooked through.
