A delicious and healthy low-carb dinner option featuring zucchinis filled with savory ground beef and melted cheese.

Ingredients

  • 4 medium zucchinis
  • 1 pound ground beef
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center to create boats.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  4. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  5. Stir in marinara sauce and Italian seasoning. Season with salt and pepper.
  6. Line a baking dish with the zucchini boats and fill each with the beef mixture.
  7. Top with shredded cheese.
  8. Bake for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
