A delightful dish featuring tender salmon fillets stuffed with shrimp, spinach, and tangy lemon, perfect for a healthy and impressive meal.

Ingredients

  • 4 salmon fillets
  • 8 oz shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Add some olive oil to a skillet over medium heat and sauté the minced garlic until fragrant.
  3. Add the shrimp and cook until they turn pink. Next, add the spinach and cook until it wilts.
  4. Stir in the heavy cream, lemon juice, lemon zest, and Parmesan cheese until everything is combined.
  5. Season the mixture with salt and pepper.
  6. Cut a pocket in each salmon fillet and stuff it with the shrimp mixture.
  7. Place the stuffed salmon in a baking dish and bake for 20-25 minutes, or until the salmon is cooked through.
  8. Serve the dish hot, with a squeeze of fresh lemon juice on top.
