A warm and hearty turkey chili with creamy pumpkin and beans, perfect for gatherings and family dinners.

Ingredients

  • 3 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 2 garlic cloves, finely chopped
  • 1 tablespoon ground coriander
  • 1 tablespoon ground paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon crushed red pepper or cayenne
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 pounds ground turkey
  • 2 tablespoons fresh thyme, rosemary, or sage, chopped
  • 1 15-ounce can unsweetened pumpkin purée
  • 2 15-ounce cans beans (cannellini, navy, or pinto), drained
  • 2 cups chicken broth
  • Kosher salt to taste
  • 1/2 cup heavy whipping cream

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery; sauté until softened, about 5–7 minutes.
  3. Add the garlic, coriander, paprika, cumin, red pepper, and black pepper; cook for 1 minute until fragrant.
  4. Add the ground turkey, breaking it up with a spoon, and cook until browned and fully cooked through.
  5. Stir in the fresh herbs and pumpkin purée, mixing well to combine.
  6. Add the drained beans and chicken broth; stir to combine and season with salt.
  7. Reduce the heat to low and simmer for 15–20 minutes to allow flavors to meld.
  8. Remove from heat and stir in the heavy cream right before serving.

Notes

For extra flavor, let the chili sit for a day if possible; the flavors will develop even more.
