A quick and delightful creamy mushroom chicken dish that comes together in one skillet, perfect for busy weeknight dinners.

Ingredients

  • 4 chicken breasts
  • 2 cups mushrooms, sliced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil over medium-high heat and cook the chicken until golden brown on both sides and cooked through, about 7-8 minutes per side.
  3. Remove the chicken from the skillet and set aside.
  4. Add the sliced mushrooms and garlic to the same skillet and sauté until the mushrooms are tender, about 5 minutes.
  5. Pour in the heavy cream and add thyme. Stir and let it simmer for a few minutes until the sauce thickens.
  6. Return the chicken to the skillet, spooning the sauce over it. Cook for an additional 2-3 minutes.
  7. Serve hot, garnished with parsley.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
