Ingredients
Scale
1 pound ground beef or turkey
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped parsley
1 egg
2 cloves garlic, minced
Salt and pepper to taste
2 pounds potatoes, peeled and cubed
1/4 cup milk
2 tablespoons butter
1 teaspoon dried herbs (like thyme or rosemary)
Instructions
Preheat your oven to 400°F (200°C). In a large bowl, mix together the ground meat, breadcrumbs, Parmesan, parsley, egg, minced garlic, salt, and pepper. Shape the mixture into meatballs and place them on a baking sheet. Bake in the oven for 20-25 minutes or until they are cooked through.
While the meatballs are baking, prepare the mashed potatoes. Boil the cubed potatoes in salted water until they are tender. Drain the potatoes and return them to the pot. Mash the potatoes while adding the milk, butter, and dried herbs until the mixture is creamy and smooth.
Once everything is ready, serve the meatballs over a generous scoop of garlic herb mashed potatoes.
Notes
Experiment with different herbs for the mashed potatoes, and consider adding chopped onions to the meatballs for extra flavor.
