A refreshing and creamy salad featuring shrimp and avocado, perfect for lunch or light dinners.

Ingredients

  • 1 lb cooked shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/2 cup diced cucumber
  • Salt and black pepper to taste
  • Pinch of cayenne or red pepper flakes (optional)

Instructions

  1. Whisk together the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, salt, pepper, and optional cayenne in a medium bowl.
  2. Add the cooked shrimp, diced avocado, red onion, cucumber, fresh dill, and parsley to the bowl.
  3. Fold the ingredients together gently to combine, being careful not to mash the avocado too much.
  4. Adjust seasoning with extra salt or lemon juice if desired.
  5. Serve immediately or store in the refrigerator for up to 24 hours.

Notes

Best eaten within 24 hours to maintain freshness, especially of the avocado. Consider adding avocado just before serving if storing.
