Blueberry Breakfast Quesadilla

A delightful and simple breakfast combining creamy cheese and sweet blueberries in a crispy tortilla.

Ingredients

  • 2 large tortillas
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 1 tablespoon butter
  • Honey or maple syrup for drizzling (optional)

Instructions

  1. Mix the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Lay one tortilla in a skillet over medium heat. Spread half of the cream cheese mixture over the tortilla.
  3. Add half of the blueberries on top of the cream cheese mixture.
  4. Place the second tortilla on top and cook until golden brown, about 2-3 minutes.
  5. Carefully flip and cook the other side until golden brown.
  6. Remove from skillet, let cool slightly, then cut into wedges.
  7. Drizzle with honey or maple syrup if desired. Serve warm.

Notes

Serve the quesadilla warm, cut into wedges. Pair with fresh fruit or milk for a complete meal. Store leftovers in an airtight container in the refrigerator for up to 2 days.
