Autumn Sausage Pasta with Brussels Sprouts and Butternut Squash

This delightful dish features roasted butternut squash, Brussels sprouts, and savory sausage, perfect for chilly evenings.

Ingredients

  • 3 cups butternut squash, peeled, seeded, and cubed
  • 12 oz Brussels sprouts, halved
  • 8 oz bow tie pasta
  • 12 oz cooked smoked beef or poultry sausage, sliced into rounds
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 3 tablespoons olive oil (divided)
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh thyme leaves
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F. Toss the cubed butternut squash with olive oil, salt, and pepper. Arrange on a parchment-lined baking sheet. Repeat for Brussels sprouts. Roast for 15 to 20 minutes for squash and up to 30 minutes for sprouts until tender and caramelized.
  2. Bring a large pot of salted water to a rolling boil. Add your bow tie pasta and cook until al dente. Drain and set aside.
  3. Heat olive oil in a large skillet over medium heat. Add the sliced sausage and cook for 5 minutes per side until browned. Remove and set aside.
  4. Add minced garlic to the same skillet and cook for 1 to 2 minutes until fragrant. Add butter and let it melt. Toss in the cooked pasta, coating it in garlic butter. Season with salt, pepper, and smoked paprika.
  5. Add the roasted butternut squash, Brussels sprouts, and seared sausage back into the skillet. Toss to combine and serve immediately garnished with fresh thyme.

Notes

Consider adding Parmesan cheese for extra flavor. Adjust smoked paprika to taste.
