3 cups butternut squash, peeled and cubed
12 oz Brussels sprouts, halved
3 tablespoons olive oil
1 lb boneless, skinless chicken thighs
1 teaspoon smoked paprika
9 oz cheese tortellini
3 tablespoons butter
5 cloves garlic, minced
1 tablespoon fresh thyme
Salt and black pepper to taste
Instructions
Preheat your oven to 400°F. In a bowl, toss the cubed butternut squash with olive oil, salt, and pepper. Spread it out evenly on a parchment-lined baking sheet and roast for 30 minutes.
Toss the halved Brussels sprouts with olive oil, salt, and pepper on a separate sheet and roast for 20-30 minutes until golden brown.
Cook the cheese tortellini according to the package instructions, then drain and set aside.
Heat a little olive oil in a large skillet over medium heat. Season the chicken thighs with smoked paprika, salt, and pepper. Add them to the pan and sear for about 6-7 minutes on each side until fully cooked and golden.
