20-Minute Chicken Gyro Bowls

Quick and flavorful chicken gyro bowls inspired by Greek cuisine, perfect for busy weeknights.

  • 1 lb boneless, skinless chicken breasts, diced
  • 2 tbsp plain Greek yogurt
  • 2 tbsp fresh flat-leaf parsley, chopped
  • 1 tbsp olive oil
  • 1 tbsp minced garlic
  • Juice of 1/2 fresh lemon
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 1/2 cup plain Greek yogurt
  • 1/3 cup finely grated cucumber, squeezed well to remove excess moisture
  • 1 tbsp fresh lemon juice
  • 1 tbsp chopped fresh dill or parsley
  • 1 small garlic clove, minced
  • 1 tsp olive oil
  • Salt and pepper to taste
  • 2 cups cooked orzo or brown rice
  • 1 cup diced cucumber
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup thinly sliced red onion
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • Fresh lemon wedges, for serving

Instructions

  1. In a medium bowl, combine the Greek yogurt, olive oil, minced garlic, lemon juice, parsley, oregano, paprika, thyme, cumin, salt, and pepper.
  2. Add the diced chicken and toss until every piece is evenly coated. You can cook the chicken right away, or for extra flavor, cover and marinate in the refrigerator for up to 30 minutes or overnight.
  3. Make the tzatziki by mixing the Greek yogurt, grated and well-drained cucumber, lemon juice, dill or parsley, minced garlic, olive oil, salt, and pepper in a small bowl. Stir until creamy and well combined. Set aside.
  4. Heat a large non-stick skillet over medium-high heat. Add the chicken in a single layer and cook for 8–10 minutes, stirring occasionally, until browned and cooked through. The chicken should reach an internal temperature of 165°F (74°C).
  5. Divide the cooked orzo or brown rice evenly among four bowls.
  6. Top each bowl with the cooked chicken, diced cucumber, cherry tomatoes, red onion, Kalamata olives, and crumbled feta cheese.
  7. Spoon the homemade tzatziki over each bowl or serve it on the side. Finish with a fresh lemon wedge and serve.

Notes

For a quicker meal, use pre-cooked or rotisserie chicken. Customize with your favorite vegetables and adjust tzatziki seasoning to taste.
